Scalloped Carrots

Scalloped Carrots/Cheese
12 medium carrots (3 lbs. about)
1 medium onions minced
1/4 cup butter
1/4 cup flour
1 tsp. salt
1/4 tsp dry mustard
2 cups milk
1/8 tsp pepper
1/4 tsp celery salt
1/2 lb Velveeta cheese
3 cups soft bread crumbs
1/3 cup melted butter

Peel and cut carrots(coin shape but thicker) cook carrots in water until barely tender-drain.  Put carrots in 9x13 glass dish.  Saute onions in 1/4 cup butter till lightly brown, stir in flour, salt, and dry mustard.  Stir in milk until smooth.  Add pepper, celery salt, and cheese, stir until cheese is melted.  Pour cheese sauce over carrots.  (At this point can cover and refrigerate if making ahead of time.)  Top with bread cubes which have been mixed with 1/3 cup melted butter.

Bake at 350 for 35-40 minutes.
